Cobb Salad, or Unmixed Chicken and Arugula Salad
Cobb salad is a so-called unmixed salad, the ingredients of which are laid out in strips on green lettuce leaves and served with dressing. It is believed that this traditional American snack was invented in a Hollywood restaurant in the early thirties of the last century. The legend of the origin of the dish is similar to the legend of the origin of Caesar salad. Allegedly, late at night, the cook only had a certain set of products, I wanted to eat. The cook mixed the products and it turned out what happened ... The main thing is that it is very tasty!
Cobb recipes are many. In my opinion, its most important quality is that everyone can order a set of products to their taste - Cobb without eggs, Cobb without onions, Cobb without bacon. In my cobb recipe with chicken, arugula and chili, I really like this combination. A slightly sour dressing of yogurt, paprika and olive oil is perfect for him.

Ingredients for Cobb Salad with Chicken and Arugula
- 80 g of arugula;
- 200 g chicken;
- 50 g of salad onions;
- 2 boiled eggs;
- 1 avocado;
- ½ lemon;
- 1 chili pepper
- 40 g parmesan;
- 10 ml of balsamic vinegar;
- olive oil, pepper.
- 100 g of Greek yogurt;
- 20 ml of olive oil;
- ½ teaspoon of smoked paprika powder;
- sea salt.
Method for making cobb salad with chicken and arugula
Rinses of fresh arugula, rinse, dry in a salad dryer, sprinkle with extra virgin olive oil and spread on a large plate with an even layer. I advise you to cook cobb salad in portions.
Cut the chicken breast fillets into thin strips, salt, pepper, fry in refined oil for several minutes until golden brown. We lay the fried meat on a paper towel so that excess oil is absorbed into the paper. Put the chicken on a plate, put the meat in a strip.
We cut thin white rings onion salad, sprinkle with salt, pour balsamic vinegar. Put a strip of pickled onions next to the chicken.
We clean the hard-boiled eggs, separately rub the protein and the yolk on a grater. Put a strip of protein on a plate.
Next to the egg white, pour a yellow strip - grated yolk.
Peel the avocado, cut into small thin slices, pour freshly squeezed lemon juice. Put on a plate a strip of avocado.
We clear the chili pod from seeds, cut into thin strips. Rub Parmesan on a fine grater. Sprinkle with grated cheese in a circle, spread a strip of chili in the center of the plate. If you do not like hot peppers, replace them with Bulgarian, or, as in the classic cobb recipe, use tomatoes.
We make a dressing for cobb salad - mix Greek yogurt in a bowl, high-quality extra virgin olive oil, add sea salt to taste, pour smoked paprika powder, mix everything thoroughly.
Cobb salad with chicken and arugula is ready. Immediately serve the salad on the table. I advise you to serve it separately in a sauce-boat. Enjoy your meal!
This dish is prepared immediately before serving, the fried chicken can be replaced with smoked or boiled chicken breast.
